American Shad can be prepared in a number of ways, and smokng is hard to beat for flavor and consistency. Shad were once the most plentiful fish in the East (George Washington was an early shad angler) and supported a huge industry. Overfishing, habitat fragmentation and stream barriers combined to push the fish into decline; today it’s making a slow but steady comeback.
